  • 1/2 cup Fat Free Sour Cream
  • 1/8 tsp, ground Black Pepper
  • 1/4 teaspoon Salt (Table)
  • 2 teaspoon, minced Jalapeno Peppers - Fresh
  • 2 tablespoon Lime Juice - Fresh
  • 1/4 cup, sliced Red Onion
  • 1/2 cup Mandarin Oranges
  • 2 cup Tri-Color Cole Slaw
  • 8 tortilla, medium 6" Corn Tortillas (Without Added Salt)
  • 1 pound Frozen Tilapia Fillets
  • 1 teaspoon Lime Zest
  • 1 tablespoon Chili Powder
  • 2 tablespoon Olive Oil

Cooking Instructions

Allow fish to thaw. Meanwhile, drain mandarin oranges, and slice segments in half cross-wise. Thinly slice red onion. Mix together 1 tablespoon olive oil, chili powder and lime zest. Pour mixture over fish fillets, coating all sides. Refrigerate while making coleslaw. Heat remaining 1 tablespoon olive oil in large nonstick skillet over medium heat until hot. Add fish fillets and cook until fish flakes and is cooked through, about 7 to 10 minutes. Remove fish to cutting board and cut into large bite-size pieces. For Cabbage Orange Slaw, combine all ingredients (Tri-Color Cole Slaw, mandarin oranges in juice, red onion, lime juice, jalapeno pepper, olive oil, salt, pepper) and toss to mix well. For Lime Sour Cream, combine all ingredients (Fat Free Sour Cream and lime juice) and mix well. Divide fish equally among tortillas and top with Cabbage Orange Slaw and serve with Lime Sour Cream.
